Ingredients
 
 

The dough

  • 2 ¼ cups All-purpose flour
  • 2 tsp Kosher salt
  • 1 tsp Instant dry yeast
  • 1 tsp Sugar

The Sauce

  • 2 tbsp EVO (extra virgin olive oil)
  • 1 can San Marzano tomatoes crushed
  • 2 tsp Dried oregano
  • 1 tsp Granulated garlic powder
  • 1 tsp Granulated onion powder
  • 1 tbsp Sugar
  • 3 Garlic cloves minced
  • Kosher salt and freshly ground black pepper

For the pizza

  • 3 tbsp EVO (extra virgin olive oil)
  • 10 oz Sliced pepperoni
  • 16 oz Brick cheese, cut into ½-inch cubes
  • 1 whole Green pepper

Instructions
 

For the dough

  • In a large bowl, mix the flour, salt, yeast, and sugar until combined.
  • Add one cup of warm water, then mix until a ball of dough is formed, about 30 seconds.
  • Mix for another 30 seconds, then roll into a uniform ball and transfer to a lightly oiled bowl.
  • Leave the dough to proof in a warm area for about two hours, or until the dough doubles in size.

For the sauce

  • Heat 2 tablespoons of olive oil in a medium saucepan over medium heat.
  • Add the minced garlic and dried oregano, then stir for about 30 seconds, until fragrant.
  • Add the tomatoes, onion powder, garlic powder, and sugar.
  • Bring the mixture to a simmer and cook for about 30 minutes, or until the sauce has reduced to about 3 cups.
  • Season with salt and pepper.

For the pizza

  • Adjust your oven rack to the lowest position.
  • Preheat your oven to 500 degrees Fahrenheit (or the equivalent, if using a pizza oven).
  • Add three tablespoons of olive oil to a large, square metal cake pan or a Detroit-style pizza pan.
  • Place the dough in the pan and use your hands to carefully stretch the dough until it covers the bottom of the pan.
  • Add the pepperoni in an even layer over the dough.
  • Top with the cheese cubes, spreading them evenly over the pepperoni, all the way to the edge of the pan.
  • Spoon the pizza sauce over the pepperoni and cheese, in three straight lines.
  • Place the pizza in the oven and bake for 10-15 minutes, until the cheese is bubbly and a crispy crust has formed.
  • Use a spatula to gently separate the crust from the pan, then place the pizza on a cutting board.
  • Slice into squares, serve, and enjoy.
