In a large mixing bowl or the bowl of an electric stand mixer, combine the sugar, yeast, and ½ cup of warm water, then whisk until the yeast has dissolved completely.
Leave the mixture to rest for 5-10 minutes, then add the rest of the warm water, olive oil, and salt.
With the mixer at low speed, slowly add in half of the flour and mix until combined.
Mix in the rest of the flour and then knead at medium-low speed until a smooth, elastic, and slightly sticky dough is formed.
Cover the bowl with plastic wrap and leave it to rest in a warm place until the dough has doubled in size, approximately 1-2 hours.
Once the dough has doubled in size, divide it into two halves.
For the Pizza
Preheat your oven to 450 F / 230 C(or appropriate temperature if you’re using a pizza oven).
Use your hands to stretch each section of dough onto a pizza pan, creating two 12-inch rounds.
In a medium mixing bowl, toss the chicken with the buffalo sauce.
Spread ¼ cup of blue cheese dressing over each pizza.
Top each pizza with 2 cups of shredded chicken.
Scatter ¼ cup of blue cheese crumbles over each pizza.
Bake for 10-12 minutes, or until the cheese is melted and the crust has started to brown.
