*Recipe yields two 10-12” pizzas – You can halve the recipe to make one 12-inch pizza.

Ingredients
  

For the Dough

  • 4 cups All-purpose flour
  • 2 ¼ tsp Instant yeast (1 standard packet)
  • 1 ¾ cups Fresh Water
  • 2 tbsp Olive oil + more for brushing
  • 1 ½ tsp Salt
  • 2 tsp Granulated sugar

For the Pizza

  • 1 cup BBQ sauce Use your favorite!
  • 3 cups Chicken breast Shredded (3-4 cooked chicken breasts)
  • 2 cups Mozzarella cheese Shredded
  • 1 Red onion thinly sliced
  • Fresh cilantro For garnish

Instructions
 

For the Dough

  • In a large mixing bowl or the bowl of an electric stand mixer, combine the sugar, yeast, and ½ cup of warm water, then whisk until the yeast has dissolved completely.
  • Leave the mixture to rest for 5-10 minutes, then add the rest of the warm water, olive oil, and salt.
  • With the mixer at low speed, slowly add in half of the flour and mix until combined.
  • Mix in the rest of the flour and then knead at medium-low speed until a smooth, elastic, and slightly sticky dough is formed.
  • Cover the bowl with plastic wrap and leave it to rest in a warm place until the dough has doubled in size, approximately 1-2 hours.
  • Once the dough has doubled in size, divide it into two halves.

For the Pizza

  • Preheat your oven to 450 F / 230 C (or appropriate temperature if you’re using a pizza oven).
  • Place one section of dough onto a lightly greased pizza pan or baking sheet.
  • Use your fingers to spread and shape the dough until you create a 12-inch round, then repeat with the second section of dough.
  • Evenly spread ¼ cup of barbecue sauce over each dough round.
  • Toss the cooked chicken with the remaining ½ cup of barbecue sauce.
  • Scatter the chicken evenly over each pizza.
  • Top the chicken with the shredded mozzarella and sliced red onion.
  • Bake each pizza for 15 minutes, then remove from the oven and top with fresh cilantro.
  • Slice, serve, and enjoy.
