This oven is being marketed as the world's first portable restaurant-style pizza oven by Gozney themselves.
It is quite easy to set up and can take up to 20 to 30 mins to be completely functional. Should you face any problem setting it up, there is plenty of help online for this oven. Once the gas is attached, the temperature can build up to 500 C in few minutes, as shown by the built-in thermometer.
The Roccbox is heavier than many of its competitors, but keep in mind that the weight of the Roccbox is due to the unrivaled levels of insulation and the thick stone floor, both of which are naturally weighty. In addition, thin stone floors (allowing for lighter ovens overall) and less insulation, which is normal in other ovens, means that the pizza is often not thoroughly cooked on its base.
The lack of insulation in some of the competitor ovens means that the flame has to be closer to the pizza to cook it. Note how rounded the Roccbox ceiling is compared to the flatness of other ovens. That’s because other ovens need to force the flame downwards lower towards the pizza to cook it. This is why often the toppings are burnt, but the base isn’t properly cooked in some of the cheaper ovens.
