Once the dough has doubled in size, release any air bubbles by punching down the dough a few times then divide the dough in half.
Place both halves on a lightly floured surface, then roll each half into a large rectangle, about 12 inches in length.
Lightly brush olive oil over both dough halves, then spread ½ cup of pizza sauce over each half.
Sprinkle ½ cup of shredded mozzarella cheese over the sauce on each half, then top with pepperoni slices.
Working slowly and carefully, tightly roll each rectangle until each rectangle forms a log.
Transfer both rolls onto a single prepared baking sheet, then chill in the refrigerator for 15 minutes.
Preheat your oven to 400 degrees Fahrenheit (or the appropriate temperature if using a pizza oven).
Line two baking sheets with parchment paper.
Remove the rolls from the refrigerator and slice into 12 1-inch slices.
Place 12 slices on each baking sheet, then sprinkle with ground basil and garlic pepper.
Bake for 15 minutes, or until slightly browned.
Remove from the oven and cool slightly before serving.
Serve with extra pizza sauce for dipping and enjoy.
