Preheat oven to 450 degrees (or equivalent, if using a pizza oven).
Grease two large baking sheets with cooking spray.
Divide the pizza dough into 4 pieces.
Lightly dust your work surface with all-purpose flour.
Roll one piece of dough into a 6-8β circle, approximately ΒΌβ thick.
Add 1-2 tablespoons of pizza sauce to the middle of the dough round.
Sprinkle mozzarella cheese over the sauce.
Add toppings as desired, then top with more cheese.
Carefully fold the dough in half, then gently press the edges together to seal.
Repeat with the rest of the dough.
Place the calzones onto the baking sheets.
Spread a light coating of olive oil over the top of each calzone.
Sprinkle each calzone with parmesan and salt.
With a fork, gently poke each calzone two times so that steam can escape while they cook.
Place the baking sheets in the oven for 20 minutes.
Remove from the oven and cool for several minutes.
Serve and enjoy.
