  • 500 g Tipo 00 flour
  • 300 g Fresh water
  • 3.5 g Instant dry yeast 
  • 10 g Sea salt
  • 1 tbsp Extra virgin olive oil
  • 0.5 tsp Sugar


  • Stir the flour, salt, and yeast mixture into the water and mix until all the flour is incorporated.
  • Add oil and knead for about 20 minutes. When the dough is ready, it will spring back when you poke at it.
  • Place the dough in an airtight container and bulk ferment overnight.
  • Divide it into 4 equally large dough balls and brush some olive oil on top of them. Now let them ferment for another 3 hours and your dough is ready.
