Setting Up the Ooni Pro Pizza Oven

One of the many perks of buying an Ooni pizza oven is how simple it is to set up. To set up your Ooni Pro:

  1. Open up the four table legs on the main body.
  2. Align the chimney and use the clip to securely attach the chimney to the main body.
  3. Make sure the holes in the stone guard are aligned with the bolts found at the front of the oven.
  4. Secure the chimney in place by tightening the included flange nuts. These nuts can be tightened by hand. The stone guard makes sure the baking stones are secure inside the oven.
  5. Put all four baking stones in the oven. Each stone sits on four bolts found at the base of the oven.
  6. Attach either the pizza oven door or the baking door. Attach the fuel hatch door at the rear of the oven and install the charcoal/wood burner by inserting it into the back of the oven.

Design and Build Quality

The most notable difference between the Ooni Pro and other Ooni pizza ovens like the Ooni Koda is the size. The Ooni Pro is the largest pizza oven sold by Ooni. The 18-inch cooking surface Is significantly larger than the Ooni Koda, Ooni Fyra, and even the new Karu 16. This extra space gives you more than enough room to cook a pizza as well as meats or vegetables in a large cast-iron skillet. Plus, the Ooni Pro has an inside clearance of 6 inches which gives you plenty of room to comfortably fit casseroles and more inside. 

Despite being the largest Ooni pizza oven, it’s still portable. The Ooni Pro weighs 48.5 pounds, so it isn’t light but it’s certainly manageable. If you can safely maneuver a gadget that weighs 50lbs, then you will be pleased to know that you can take your Ooni with you whenever you want to share the joy of delicious homemade pizza with others. However, it’s easily the least-portable of all Ooni pizza ovens so if you decide to take it on the go, proceed with caution. You would do best to take advantage of the “security loop” – a unique feature that lets you secure the oven to whatever surface it is placed on while also preventing movement while using the oven.

The body of the Ooni Pro is made out of brushed 430 stainless steel with ceramic fiber insulation. Three legs provide sturdy support. Aesthetically, the Ooni Pro is sleek and modern. But more than that, its design allows the Ooni Pro to heat up quickly and retain heat. The double-walled design also reduces discoloration to the outer wall.

The Ooni Pro has a chimney with an adjustable lever so that you can adjust the airflow. When the lever is in the vertical position, the charcoal or wood burn hottest with maximum airflow. When the lever is moved to the horizontal position, airflow is reduced, therefore reducing the flame and temperature. You can also adjust the airflow with the ceiling vent on the inside of the oven.

The Ooni Pro comes with two doors: a baking door and a pizza door. The baking door has a glass window and a built-in thermometer. The baking door is great for retaining heat inside the oven, which is important when cooking meat or vegetables or baking bread. The pizza door has an opening in it that is large enough to slide your pizzas through when putting them in the oven or taking them out.

The Ooni Pro comes with four 15mm cordierite baking stones, which are thicker than the stones that come with the other Ooni pizza ovens.

Here are a few additional tips for cooking with your Ooni Pro:

  • Before cooking with your Ooni Pro for the first time, it is recommended that you let the oven run at the highest temperature for around 30 minutes, then let it cool and wipe it down. This will “season” your oven and give you an opportunity to get the hang of how it works.
  • While the Ooni Pro can be used to cook just about any pizza, to get the best results you should stick to thin dough and avoid piling on too many toppings. A thin base cooks more evenly and comes out crisp.
  • Because the back of the Ooni gets the hottest, you will want to spin the pizza as it cooks. When cooking at extremely high temperatures, food can burn quickly so you’ll want to pay attention to it.
  • As your Ooni Pro heats up, you may notice sizeable flames. For the most flavorful pizza, wait until the flames die down slightly.
  • Scrape the pizza stone after each use or your next pizza may stick and be difficult to remove.

Cleaning Your Ooni Pro

Depending on the temperature you used to cook with as well as the temperature outside, the Ooni Pro typically takes about an hour to cool completely. Once the oven has cooled, use a non-abrasive brush or wipe to sweep out the inside of your oven. To dispose of leftover ashes, remove the burner tray through the front of the oven and dump out the ashes.

To clean the outside of your Ooni Pro and keep it looking brand-new, use a small amount of stainless-steel cleaner, but make sure the product you use is non-abrasive.

About Ooni

The best pizza is made hot and fast in an oven that can handle extremely high temperatures. Before Ooni, you’d have to go to a restaurant or shell out thousands of dollars on a traditional, at-home pizza oven. But thanks to Ooni, that’s no longer the case.

Update: One Year Later

After using the Ooni Pro for one year, here are the things we noticed:

  1. It took me a while before I got used to this oven. Since it's wood and not gas, there is a learning curve before getting comfortable with it.
  2. I find this oven to deliver identical results as a commercial-grade wood fire oven. The pizzas come out perfectly once you master the oven.
  3. While it's marketed as portable, I never moved from my back yard. At 68lbs, it's somewhat heavy to carry around. If you're looking for a portable oven, there are better alternatives out there. But if you're looking for an authentic oven, this is the one.
  4. While it does get sooty after each use, the stainless steel makes it very easy to clean. You can just wipe off the soot after it cools down.
  5. Get a heat-resistant glove and a flame gun. It will make your life easier when using this oven.
  6. Overall it's still one of the best ovens I have tried to date.
